@extemp: Part of what I loved about this particular seitan was how quick and easy it made cooking!
I definitely would love to try making my own sometime, but during the week, I'm not sure how practical it is with my schedule.
I make this really good fake chicken salad with seitan, and I miss having that in my lunch rotation!
Have you made your own before? Does it keep well?

They've stopped making the seitan that I live on, and none of the stores that I regularly shop at have ANY seitan now and I WANT TO DIE.
What's a soy-intolerant vegetarian to DO???
