@exult, b'danks. i do cook short ribs regulary, but usually follow one of three basic recipes: goulash inspired, asian, or regular regular. i know there's so much more i could be doing. i so love beef short ribs.
@lo, i followed my basic regular regular recipe today but did throw in the anchovies from your recipe.

He says he braises them in black coffee, and a combination of whole dried ancho and chipotle chiles.

@exult, nice! y'know, i just bought some chipotles in abado sauce, and have some anchos. i was considering using them, but didn't quite know what direction to go with them.
