Driving to Michigan on Wednesday with my 4 yr old. Packing a cooler to save money and time - what should I take?

I'd say bring stuff to make some simple sandwiches. It can be inexpensive and it's something that you could probably eat while driving, or stop and have at a park or rest stop.
I pretty much eat anything, not terribly picky. And the drive is about 10 hrs, though I'm breaking it in chunks and taking it kind of easy for Saxon.
If you don't want to eat unhealthily buying food on the road, I would plan out each meal and a few snacks.
For you: A well-balanced salad in a tupperware with maybe some almonds (good to sustain you). If you put the dressing on it and don't plan to eat this one right away, it could get way too mushy. So maybe a smaller tupperware within it with the dressing.
Sandwiches on bread with hearty grains but enough vegetables!
A cool soup unless you have a thermos and plan to eat it pretty quickly into the trip (if it's hot- like maybe a light chili). A good cool soup if you like these things are avocado, cucumber and a little dill (and a pinch of sea salt and black pepper. Sometimes lemon juice)
Snacks: fresh fruit, nuts, granola bars
For Saxon: All cooler foods that he likes to eat. Sandwiches work, I'm sure.
I'd recommend packing smoothies for both of you too if you like them! They are good to start the day.
This could be all off, and I'm being vague since I don't know both of your eating habits. I'm going to be starting a healthy guide to eating on the road soon, actually!
Make sure you have enough fiber and don't eat too many dense carbohydrates or you'll feel bloated.
I know traveling and not having access to my own downtime and home can throw my stomach out of whack sometimes.

ensure for sustainance and water in large mouth bottles that you can pee in after they're empty so you don't have to stop.
ummm...scratch that last part. you don't have a conveinence hose like us fellas. you'll have to pull over.
